Peanut Butter Banana Baked Oatmeal
I’ve done a whole bunch of breakfast experimentation with our one-year-old over the past several months and by far, this Peanut Butter Banana Baked Oatmeal ranks number one.
When I open the fridge in the morning to grab his piece of baked oatmeal, his face lights up with the biggest grin I’ve ever seen.
While most adults would light up when they saw a big juicy hamburger or a slice of fudgey chocolate cake, he goes ecstatic for peanut butter banana baked oatmeal. Yup, that’s my boy.
Another sign that he adores this baked oatmeal is the speed at which he shovels it into his mouth. These are not tiny little bites, my friends.
It’s back to school time…and us mommas have to figure out how to feed our tiny armies before their days full of learning and fun. Or, there are my college students out there who need to feed yourselves after a summer of mom’s home cooking…{way harder than it sounds, I know}!
I {personally} am very excited to get back into our homeschooling routine! However, having healthy breakfasts on hand is a crucial part of starting every day the best we possibly can!

INGREDIENTS
WET
- 1 very ripe banana, medium
- 2 eggs, large
- 1/3 cup peanut butter, creamy
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup
- 1/2 cup unsweetened almond milk
DRY
- 1.5 cups rolled oats
- 1/4 cup oat flour (or any kind of flour)
- 1 teaspoon baking powder
- pinch of salt
INSTRUCTIONS
- First, preheat oven to 375ºF and spray a medium-size baking dish or cake pan with coconut oil cooking spray. I used a 1.5 qt. baking dish, but a 9×9 inch cake pan will also work!
- In a large bowl, mash 1 very ripe banana until liquidy. Then, add in eggs, peanut butter, vanilla extract, maple syrup, and almond milk and mix until smooth.
- Add rolled oats, flour, baking powder, and salt, and mix until everything is thoroughly combined.
- Transfer batter into baking dish and slice a few bananas on top.
- Bake at 375º for about 30-40 minutes (it will depend on the size and depth of your baking dish) or until firm.
