Coconut Lime Poke Cake
Put the lime in the coconut, you drink ’em bot’ up … Harry Nilsson sang the promise that we would feel better if we just put the lime in the coconut a drink them both together.
We are having a heat wave here in San Diego and I’m beginning to think Harry has something there because this Lime and Coconut Poke Cake is absolutely cool and refreshing … and it’s definitely making me feel better in our unseasonal 90 degree weather.
One of my most popular recipes on this blog is my Coconut Cream Poke Cake, which is wonderful as it is, but I have been toying with the idea of adding lime to it, and I’m so glad I did!
I do have slight coconut and lime addiction – an addiction to each element separately, as well as combined together. And this Coconut Lime Poke Cake is a wonderful marriage of the two tropical flavors.
I love making poke cakes. I got hooked when I made this Strawberry Poke Cake … it was both lovely and divine. Shortly after that, I went poke cake crazy and made this mango-pineapple Tropical Poke Cake , which instantly transported me to the islands with every single bite. Not bad for a cake.
This cake starts with a boxed mix, but with the addition of lime and coconut, it’s not your typical boxed cake.

Ingredients
- 1 box white cake mix
- ingredients specified on cake mix box
- 1 cup coconut
- 1- 3 oz. box lime Jello
- 1½ cups water
- 1 can coconut milk
- ¾ cup powdered sugar
Instructions
- Place coconut milk in the fridge, gently without shaking or stirring in any way. Let chill several hours, or overnight.
- Prepare white cake according to package directions (*see notes) and add ½ cup shredded coconut. Bake in a 9x13 pan, according to package directions. (usually 350 degrees for about 25-30 minutes) Let cake cool.
- Boil 1 cup water, add lime Jello, and stir until completely dissolved. Add ½ cup cold water and stir.
- Using a fork or toothpick, poke many holes in the cooled cake. Pour the Jello mixture evenly over the cake. Refrigerate for 30-60 minutes to let cool and set.
- Very carefully remove coconut milk from fridge, and without shaking or stirring, open can. Spoon out the opaque white foam from the top of the can, leaving the syrup behind. Whip this coconut milk cream for 3-4 minutes. Add powdered sugar and 1 T. of the coconut milk syrup, and mix well. (*see notes)
- Frost cake thinly with the coconut whip.
- Toast ½ cup coconut on a baking sheet, baking at 425 degrees for 4-5 minutes, until brown in color. Sprinkle toasted coconut over the top of the cake.
