Funfetti Buttermilk Pancakes
Aloha! Thank you so much for all the well wishes on our honeymoon. This morning we went swimming with sea turtles and happened upon dozens of false killer whales and dolphins near the Kauai coast. Unbelievable! Tomorrow we are going hiking followed with a luau in the evening. It’s going to be hard leaving this weekend! However, returning means I’m reunited with this cuddly monster.
Oh, by the way… I’m typing this introduction with one of the best views in the world.
Happy Monday friends! I hope you had a great weekend. Our winter was mild this weekend and we took advantage of it and spent some time outside. All the snow is gone and it was nice enough for a lazy walk and the kids running around. We made this funfetti buttermilk pancakes recipe for brunch on Sunday and they were a delightful treat for a lazy morninf.
To be honest, I first made and took pictures of these pancakes a few weeks ago intending to share them with you before Valentine’s Day and National Pancake Day. But with the rebranding of the blog that was completed last week, I lost track of time and didn’t get to share them with you. Forgive me. However, nothing says we should only consume sprinkles when love is in the air. It’s always appropriate if you ask me.
Valentine’s Day may have passed but this is perfect breakfast for you and your special ones. These funfetti buttermilk pancakes are fluffy and perfect with colorful jimmies.

So, I know last week I told you my absolute favorite breakfast on the planet is eggs benedict. Preferably from scratch on a lazy Sunday morning with mimosas and friends at the kitchen table. Is there truly anything better?
Yes. Abso-freaking-lutely. And it starts with the letter F and ends with unfetti. Funfetti buttermilk pancakes piled high with smooth ‘n sweet vanilla icing.

Ingredients
- 1 1/3 cup all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 1 box Pillsbury Funfetti cake mix
- 1/3 cup canola oil
- 3 large eggs
- 2 1/3 cups milk
- 1/3 cup sprinkles
Frosting:
- 1 cup powdered sugar
- 2 tablespoons butter softened
- 2 tablespoons half & half cream
- 1/2 teaspoon vanilla
Instructions
- In a large bowl, combine the flour, baking powder, sugar, salt and cake mix. Set aside.
- In another small bowl, mix together the oil, eggs and milk.
- Add the wet ingredients into the dry ingredients and mix just until combined. Fold in the sprinkles. Batter will be thick. (If you'd like thinner pancakes, you can add a bit more milk.)
- Heat a griddle to about 250-275 degrees (low heat so the pancakes do not burn). Spray the griddle with cooking spray.
- Ladle the pancake batter onto the hot pan and cook the pancakes for about 1-2 minutes or until bubbles start forming in the batter. Flip the pancake and cook for an additional minute or until cooked through.
- This recipes makes about 22 5" pancakes.
For the Frosting
- In a small bowl, stir together the powdered sugar, softened butter, cream and vanilla. This frosting will be at a spreadable consistency.
- If you'd like to drizzle the frosting, microwave the frosting for about 10 seconds and stir, then drizzle over the pancakes.
- Double the frosting recipe, if desired.
