I think hot sauce might be the greatest condiment ever invented. Buffalo sauce is definitely the best thing to ever happen to chicken.

INGREDIENTS
- 3 chicken breasts, diced
- 1 cup seasoned flour
- 1 1/2 cups panko breadcrumbs
- 3 eggs, whisked
- 1 cup hot sauce
- 1/2 cup butter
- 1 tbsp honey
- 1/2 tsp pepper
- 1/2 tsp salt
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 tbsp lemon juice
- 1/2 tsp pepper
- 1/2 cup crumbled blue cheese
- 2 tbsp chopped chives
- Chopped Celery
- Lettuce
Directions
- Pre-heat oven to 180ºC.
- Coat chicken pieces in flour, then egg then press into the panko. Arrange on a parchment lined baking tray. Bake for 30 minutes until golden brown.
- Meanwhile, in a large sauce pan, melt butter over medium heat, add hot sauce, honey and pepper. Bring to a boil and let thicken just slightly. Toss chicken in sauce to coat.
- Make a blue cheese dressing by whisking sour cream, mayonnaise, lemon juice, salt pepper, blue cheese,1 tbsp chopped chives until combined.
- Top lettuce cups with buffalo chicken, followed by blue cheese sauce, chopped celery and chives.
- Enjoy!
