Vegan Banana Chocolate Chip Doughnuts

Just like that, it’s March. Sometimes I feel like it’s true that time seriously flies, like in the summertime, but it seems like the dark and often dreary winter months just creep by. So I am absolutely thrilled that March is here, and that spring weather is on the way! There’s nothing prettier than trees and flowers starting to bloom, especially after a particularly long and freezing cold winter.

There’s also nothing prettier than a pan of vegan banana chocolate chip doughnuts waiting to be devoured on a Saturday morning, so let’s chat about that situation!

Got Ripe Bananas? Make these Delicious donuts. The batter is a few ingredients, 1 Bowl and comes together very quickly Let the yeasted batter sit for a few minutes to rise, then bake and glaze! Frost or ice with chocolate or simple vanilla icing and some toasted coconut.

You can make these without yeast and gluten-free. See recipe notes for options. The donuts by themselves are not too sweet and rely on ripe banana for most of the sweetness. These make a great breakfast (use less sugary frosting such as salted caramel, caramelized banana, cashew cream frosting) and also great dessert. It’s not a secret that I love banana bread, or that bananas are my favorite fruit (I mean, obviously). So the fact that these doughnuts are basically banana bread transformed into the cute, doughnut shape makes them an immediate winner for me. They’ve got all the sweet banana flavor, soft texture, and melty rivers of chocolate that you’ll find in my favorite banana bread. Plus, the ingredients and method couldn’t be more simple!

Ingredients

  • 2 cups gluten-free oat flour
  • 1 tablespoon baking powder
  • 1/2 tablespoon cinnamon
  • 1/4 teaspoon sea salt
  • 2 large very ripe bananas, mashed
  • 3/4 cup almond milk
  • 1/4 cup coconut sugar
  • 2 tablespoons coconut oil, soft
  • 1 tablespoon vanilla extract

Chocolate Frosting:

  • 1 cup dairy-free chocolate chips
  • 1/2 tablespoon coconut oil

Preparation

  1. Preheat oven to 350°F. Grease a donut pan well.
  2. In a bowl, mix together the mashed bananas, coconut oil, almond milk and vanilla extract.
  3. Add the oat flour, baking powder, cinnamonn and sea salt. Mix until batter is formed.
  4. Using a spoon, add batter into the donut pan, shaking tray gently to settle.
  5. Bake 10-12 minutes or until firm to the touch. Allow to cool before removing donuts from baking tray.
  6. While donuts are cooling, melt together the chocolate chips and coconut oil and whisk until smooth. Once donuts are fully cooled, dip into frosting. Top with sprinkles, nuts, etc.
