EASY LOW CARB CHEESE BOMBS
This is really a delicious way to enjoy a melted cheese in bread. Especially when you want to enjoy melted cheese in bread that is low in carbs as well. I could certainly get lost in these cheese bombs. Luckily, if you eat enough then you can get pretty full from eating them. Maybe it is because they are so warm that makes them so filling.
These amazing cheese bombs use FatHead dough – I first wrote about this fabulous low carb (and high fat) dough in my recipe for Pigs in Blankets. I’ve made it several times since then, and it’s always been a success! If you want to know more about it, check out my Ultimate Guide to FatHead Dough!

Form the dough around the filling, ensuring that all sides are completely sealed. Place it on a baking sheet lined with a silicone mat. Continue with the rest of the dough: this recipe makes 16 cheese bombs.
Sprinkle any remaining bacon bits over the top of each bomb, then roast in a preheated oven for 10 minutes.

Ingredients
- 60g butter (1/4Cup or 2 oz)
- 60g coconut oil (1/4 or Cup 2 oz)
- 115g cream cheese (1/2 Cup or 4 oz)
- lemon juice and zest from 1 lemon
- 2 Tablespoons of Sukrin+ sweetener
- little natural coloring (possible to use a bit of juice from a fruit or LC syrup)
Instructions
- Heat up butter, coconut oil and cream cheese together in a microwave and mix it together to get a soft paste
- add 2 spoons of Sukrin+ and lemon plus zest
- if needed or wanted add a drop of natural coloring or a bit of juice from a fruit or LC Syrup
- Spread the mixture into silicon molds and place it into the freezer
- Leave it for circa 1 hour
- Take it from the freezer, out of the molds and keep it in the Zip-lock bag in the freezer so they do not melt.
- Use whenever taste for sweet and need extra fat
