Low Carb Keto Garlic Breadsticks
When I think of breadsticks, I think of the ones that are served at Italian restaurants at the beginning of a meal. Fresh and hot from the oven, covered with garlic, butter and parmesan, and super soft when you bite in.
When I started making low carb breadsticks, most of the recipes I came across were basically low carb cheese-topped bread cut into strips. And while those type of breadsticks are delicious and I make them all the time, I also wanted to make a low carb version of the restaurant-style breadsticks that come to my mind when I think of breadsticks.

This famous low-carb dough is known as Fat Head dough becuase of Tom Naughton, the creator of Fat Head, the movie. It’s a comedy-documentary that explains how low cholesterol is unhealthy, saturated fat does not cause heart disease but instead sugars, grains, starches and processed vegetable oils do. WHAT IS FATHEAD DOUGH?
Fathead dough is a low carb/keto dough that is made out of cream cheese, mozzarella cheese, eggs and a flour substitute. It started out as a pizza crust recipe published by Tom Naughton while he was creating the movie Fat Head. The recipe became an internet viral sensation and has since been adapted and modified for recipes beyond pizza crust, such as soft pretzels, bread rolls and bagels.
The great thing about this cheesy keto garlic bread recipe using Fat Head dough, is that there’s absolutely no grain or wheat at all.

Ingredients
- 6 ounces shredded mozzarella cheese (roughly 1 1/2 cups)
- 3 ounces blanched almond flour (roughly 3/4 cup)
- 2 ounces cream cheese (4 tablespoons)
- 1 large egg
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- vegetable oil spray
Toppings:
- 3 cloves garlic minced
- 1 tablespoon butter
- 1 tablespoon finely grated parmesan cheese
Instructions
- Preheat the oven to 375 F. Prepare a baking sheet lined with parchment paper or a silicone baking mat.
- In a large heatproof bowl, combine all dry ingredients (almond flour, garlic, oregano, baking powder, salt) until well-mixed.
- Add mozzarella cheese and cream cheese to the same bowl. Microwave for 45 seconds, stir, and microwave for another 45 seconds or until the cheese is melted. Stir until the mixture forms a smooth dough.
- Add the egg, stirring it in until absorbed and well-mixed. If easier, use your hands to knead once the dough is cool enough to handle.
- Cut the dough into 8 equal pieces. Roll each piece into a log about 9 inches long, and form into a knot-like shape. Place the knots at least 1 inch apart on the prepared lined baking sheet. Spray the tops with vegetable oil.
- Bake at 375 F until lightly golden on top, about 15 minutes. Remove the garlic knots from the oven. Set the broiler on high.
- In a small bowl, add butter and minced garlic. Microwave until melted. Brush the garlic butter over the tops of the garlic knots. Sprinkle parmesan cheese on top.
- Return the garlic knots to the oven and broil until golden brown on top, about a minute. Serve while hot.
