CHEESY BACON RANCH FRENCH BREAD PIZZA

For years and years I’ve dealt with Jordan being a picky eater. The apple doesn’t fall far from the tree, because I’m super picky too (and, even though he won’t admit it, so is Mel). Pasta, rice, and potatoes are off the table for Jordan: she doesn’t like any of them unless it’s a french fry. She’ll eat most meats, but hates all beans, and she never met a bread she didn’t like. She has four favorite foods: cheese quesadillas, cheeseburgers, grilled cheese, and pizza.

Whenever I ask what she wants for dinner, her first choice is ALWAYS to go out. Second choice is pizza. Third choice is whining about what I’m actually making. As much as I’d love to rotate through her top four day in and day out, my waistline can’t handle that much kid food. But, more often than I’d like to admit, I cave on pizza because it’s my favorite too. Sometimes I’ll make homemade pizza, and other times we order in.

I know, I’m going somewhere with my story, I promise. Pizza reminds me of how picky Jordan is because recently she’s discovered ranch dressing. She never liked it before (she used to be the only kid eating carrots plain at any play date) but now she LOVES dipping her pizza in ranch. I created this french bread pizza with her in mind because of her new love.

There is nothing better in this world than cheesy, buttered-garlicky bread. I love seeing the gooey, stringy melted cheese pull away as you take a piece when it’s sizzling hot. I may have exaggerated a little because there are things that may be better, but all I can think about is this cheesy bacon ranch garlic bread. It’s on my mind, and I wish I could indulge in a few pieces right now. Instead, I will just tell you why you need to make this cheesy garlic bread ASAP.

I am going to say that this isn’t your traditional garlic bread. The bacon and ranch take boring old cheesy garlic bread to a whole new level. It’s another level I thought I would never visit with garlic bread because garlic bread is great already. Seriously, go check to see if you have these items in your pantry and refrigerator, or even make a quick run to the store. It’s a must-make!

If you love cheesy bread, I highly recommend trying our buffalo chicken french bread! It’s the perfect appetizer for games or for a party.

Each slice contains the perfect balance of butter, garlic, ranch seasoning, bacon, and cheese. There is one thing I will say this bread isn’t – greasy. It contains the right amount of butter mixed with a little olive oil, mixed with minced garlic, and slathered on French bread.

Ingredients

  • 1 loaf of French Bread sliced in half lengthwise
  • 1 cup +/- Ranch dressing
  • 3 cups shredded cheese We used a colby jack, sharp cheddar, and mozzarella blend
  • 2 cups diced cooked chicken (Rotisserie chicken works great here!)
  • 1/4 cup bacon bits
  • 2 green onions thinly sliced
  • 1/4 cup shredded Parmesan cheese

Instructions

  1. Preheat oven to 425 and line a baking sheet with foil.
  2. Compress each half of the loaf of bread--smash it down good! This will help it not to soak up the ranch dressing and become soggy. Spread about 1/2 cup ranch dressing, more or less depending on how saucy you like things, on each half of the french bread. Make sure to spread it all the way to the edges to prevent them from getting dry and burning.
  3. Top each half of the pizza with one cup of cheese, one cup of diced chicken, 2 tablespoons bacon bits, and half of the green onion. Top it off with another 1/2 cup shredded cheese and a few tablespoons of shredded Parmesan.
  4. Bake at 425 for 6-10 minutes until cheese is melted and bubbly. Allow to cool for 3 minutes before slicing and serving.
