Easy Pancake Bites Recipe
Back to School time is coming whether we like it or not. The truth is, I have to feed my kids year round….crazy, right?! I swear they eat enough for a small army, but I have to remind myself that they are still growing. The burning question at my house every morning is, “What do we have for breakfast?” They have their fingers crossed for pancakes!
I would love to say that I am an amazing mom who makes eggs, bacon, hash browns, etc. However, I am keeping it real. That doesn’t happen unless we are having breakfast for dinner. I am lucky to make myself a cup of coffee and snag a banana or granola bar. My kids usually have cereal, granola bars, muffins, bagels, fruit, etc. These pancake bites have made their way into our rotation. They are simple. I can customize them for each kid. Plus, they have less sugar than muffins.
Pancakes are one of the best foods ever created. They are incredibly easy to make and they taste out of this world delicious! Not to mention my picky eating kids always clear their plates when I make them.
So, when I saw these mini pancake muffins on Pinterest from Five Heart Home I knew I had to try them! They were a breeze to make and I couldn’t stop dunking and poppin’ ’em!
I love anything that is miniature and bite-sized, it just makes food that much better and more fun to eat, for both young and old alike. These mini pancake bites are so easy to throw together and you don’t have to stand around forever flipping pancakes!
Just pour in the batter, add toppings and give a quick bake in the oven, it’s as easy as that. I definitely preferred these fresh out of the oven, so if you don’t think you’ll need 44 then just make half the recipe.

Ingredients
for 12 servings
- 2 cups flour (250 g)
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 2 eggs
- 1 ½ cups milk (355 mL)
- 2 tablespoons maple syrup
- 2 tablespoons butter, melted
- 2 tablespoons chocolate chips
- 12 raspberries
- ¼ cup blueberry (25 g)
- ½ banana, sliced
Preparation
- Preheat oven to 375ºF (190ºC).
- In a large bowl, combine flour, baking powder, and salt.
- Add in eggs, melted butter, and maple syrup. Whisk. Add in milk and whisk until all ingredients are incorporated.
- Evenly distribute the batter in a 12-cup nonstick muffin tin. Top with fruit and chocolate chips.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
