Sausage, Egg and Cheese Breakfast Bagels
I don’t know about you, but I like a hearty, protein-packed breakfast which is why I’m excited to share this SUPER SIMPLE and DELICIOUS recipe with you guys today for Sausage, Egg and Cheese Breakfast Bagels.
I bought a snazzy new toaster oven a few weeks ago, I had a bunch of bagels in the freezer that I purchased for .99/pack and my chickens are laying eggs like crazy so this recipe was a no brainer for me. I toasted the bagels in the toaster oven, but I put instructions for using an oven in the recipe since that is what most people will use. Enjoy the breakfast bagels!
Breakfast is not my friend. First, it’s early. Who likes anything when it’s early? Second, it’s usually packed with super sweet sugary cartoon themed things. Not meat. Which as we know, is kind of my thing. If you want a decent home cooked meal, you either have to make it yourself (did I mention it was early, and you are most likely grumpy?) or go out (see previously mentioned note, oh and now you have to put on pants). So, sugary rabbit with fruit flavor cavity causers it is.
Unless you get up and start making yourself these protein packed energy bombs of flavor. First we start with a savory egg. Gods gift to man. Then we mix in some peppers and onions and top it with a tomato basil sausage and some cheese before smothering it between a toasty bagel. Now we are talking my kind of breakfast. With a little (I’m talking 7 minutes of searing some sausage) prep work the night before, this comes together as quickly as you can scramble and egg and place it in the toaster oven, which isn’t nearly as complicated as fancy French toast. And it will leave you full all day long.

HOW TO MAKE SAUSAGE, EGG & CHEESE BAGEL PIZZAS:
- Preheat your oven or toaster oven to 400 degrees.
- Cook and crumble 1/2 pound of ground breakfast sausage. Use spicy sausage if you want these breakfast pizzas to be spicy.
- Whisk together 5 eggs with 2 tablespoons of milk or cream and scramble them in a non-stick pan coated with 1 tablespoon of butter. Undercook the eggs slightly because they will finish cooking in the oven.
- Split the bagels in half and top with sausage and eggs and then sprinkle with cheese. I like to use a shredded Mexican cheese but use whichever cheese you like or need to use up. Cheddar, Monterey Jack, and mozzarella all work well.
- Bake for about 15 minutes and they are ready!
Ingredients
- 1/2 pound spicy ground sausage
- 2 large everything bagels
- 5 large eggs
- 2 tablespoons milk or cream
- 1 tablespoon butter
- 1 cup shredded Mexican cheese
Instructions
- Preheat oven to 400 degrees.
- Cook and crumble sausage.
- Whisk together eggs and milk. Melt butter over medium heat in a nonstick pan. Add eggs and scramble. Cook them until they are just barely set but still a little runny. They will cook more in the oven.
- Split bagels in half and divide the eggs, sausage and cheese evenly between them.
- Bake 12 to 15 minutes.
