Low Carb Chicken Divan
If you are following the keto diet or a low carb diet, you need to try this recipe. I’ve been getting the Keto Can subscription box for several months and am enjoying trying the new products. This recipe was featured in one of their boxes.
It’s so good that it almost feels like you are cheating! But you’re not so you can relax a little and have a second helping if you like.
Warning: it’s filling! I had one serving and I was stuffed! Low carb food is truly delicious.
This keto-approved chicken divan recipe is a creamy, cheesy, broccoli-filled dish that is an instant throwback to my childhood. We’ve taken the liberty of giving this ‘80’s casserole a low-carb makeover so it’s a whole lot better for you—but every bit as cozy—as the classic.
I have vivid memories of my mom putting me in charge of grating the cheddar cheese while she poached the chicken and steamed the broccoli for this classic casserole. Meanwhile, my sisters were in charge of opening the cans of cream of chicken soup.
Once you’ve got your steamed broccoli, you just need to dump it into a casserole dish along with some cubed chicken. There’s no need to cook the chicken first. It will cook up fine in the oven. Then, you just mix in some mayonnaise, sour cream, cooking wine, spices, and Parmesan cheese.
Then, you’ll bake the dish in the oven for about 25 minutes. You want the chicken to be fully cooked and the top to be a little browned. It doesn’t take long, especially if you cut up the chicken into small pieces.
