Quick & Easy Chicken Flautas
I always love having several super simple recipes for busy nights. These meals are not completely homemade but rather they use easy ingredients that are pantry staples.
These chicken flautas use canned chicken. Yes, canned chicken 🙂 Through out years of cooking dinner I have found that canned chicken is actually a good quick & easy thing to use for recipes.
I would never serve it plain as is from the can, but when you add other stuff to it, it is actually good and honestly no one can even tell the difference. The canned chicken is what makes this recipe so quick and easy to make.
This recipe reminds me of the Chicken Flautas you can buy pre-packaged at Costco. While these store-bought versions are convenient to purchase already made, there are some advantages to making your own at home. First, making your own is definitely the healthier option. These Easy Chicken Flautas are baked, not fried. You can also use a variety of tortillas if you are trying to cut back on calories or have a gluten allergy. Corn tortillas, whole wheat tortillas, and low carb tortillas can all be used in this recipe. Second, making your own at home is more economical. The last time I looked at my area Costco, a package of 16 flautas cost $9.49. You can make a lot of flautas at home for that amount!
We have some other EASY Mexican recipes that I would highly recommend if you like our Easy Chicken Flautas. I use our Restaurant Style Refried Beans and our Restaurant Style Mexcian Rice for side dishes every time I make Mexican food at home. We honestly never make a Mexican dish without these two sides anymore. Some of my other favorite Mexican dishes are our Carne Asada Burritos and our Honey Lime Chicken Enchiladas.
Flautas are traditionally a rolled up tortilla with filling inside them. Kind of like a taquito but flautas use flour tortillas. Which makes this recipe kid-friendly because I have never met a kid that does not like flour tortillas.
My girls eat them plain from the fridge….. oh to have their metabolism and be able to eat carbs, haha 🙂
Spraying the tops of the flautas before baking with cooking spray, helps them to get super crispy and browned. It really is the secret step so don’t forget it.

Ingredients
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1/4 cup minced onion
- 1/4 cup chopped black olives
- 2 tablespoons lemon juice
- 1 tablespoon oil
- 1/4 teaspoon ground paprika
- 1/8 teaspoon ground black pepper
- 1/8 teaspoon salt
- 1 1/2 cups cooked shredded chicken
- 8 flour tortillasoil for frying, or as neededtoothpicks
Directions
- Melt butter in a skillet over medium heat; stir flour into butter until smooth. Add onion to flour-butter mixture; cook and stir until onion is softened, 5 to 10 minutes. Mix black olives, lemon juice, oil, paprika, black pepper, and salt into onion mixture; cook and stir until heated through, about 2 minutes. Stir chicken into mixture and remove skillet from heat and cover.
- Heat oil in a large, heavy saucepan or deep-fryer.
- Fill tortillas with chicken mixture. Roll tortilla around filling and secure with a toothpick.
- Fry the rolled tortillas, working in batches, in the hot oil until browned, about 2 minutes. Transfer fried tortillas to a paper towel-lined plate using a slotted spoon or tongs.
