Doritos Casserole with Chicken

Doritos Casserole with Chicken is an easy weeknight dinner recipe using rotisserie chicken.

This creamy chicken casserole is loaded with cream cheese, corn, shredded cheddar and topped with crumbled Doritos.

Cheesy Dorito Chicken Casserole is full of chopped chicken, black beans, Rotel tomatoes, and cheese with lots of crunch from crushed Dorito chips. One of my very favorite Mexican casseroles!

If your family likes the flavor of Mexican food but is a little tired of taco night, this comfort food casserole is just the thing to try. It’s perfect for a potluck or having friends over.  Cheesy Dorito Chicken Casserole really feeds a crowd and it’s pretty much an all in one meal.


This is pretty much a dump and go recipe. You do need to saute the onion briefly to soften it, but then you just mix all the ingredients together. Put the mixture in a 9X13-inch pan, layering it with crushed Dorito chips and shredded cheese. Just 30 minutes in the oven and you’re ready to eat.

To make this Doritos casserole, I started by dumping some Philadelphia Chive Whipped Cream Cheese into a large mixing bowl with some condensed cream of chicken soup.

I used an electric mixer to whip together the cream cheese and chicken soup until smooth.

Then I added some shredded rotisserie chicken, chopped green onions, canned corn, shredded cheese and seasonings to the bowl.

I used a rubber spatula to stir all of the ingredients together until fully combined.

Then I dumped the mixture into a greased 9 x 13 inch baking dish and spread it out evenly.

Recipe Notes For Cheesy Dorito Chicken Casserole

  • Most of the spice comes from the 2 cans of Rotel tomatoes. Use hot Rotel tomatoes if you want it really spicy, regular for a little kick, and mild Rotel if you don’t want it spicy.
  • Use rotisserie chicken to make this meal a breeze to make.
  • Ranch Doritos can be used instead of Nacho.

Ingredients

  • 1 (7-ounce) bag of Doritos (crushed; about 4 cups crushed)
  • 2 to 3 cups cooked chicken (diced)
  • 1 cup sour cream
  • 1 (10 1/2-ounce) can condensed cream of chicken soup
  • 1/4 cup onion (finely minced)
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup sharp cheddar cheese (or mild cheddar cheese, grated)
  • 1/2 cup mozzarella cheese (grated)

Steps to Make It
Gather ingredients.

  1. Heat the oven to 350 F (180 C/Gas 4). Grease a 2-quart casserole dish or spray it with nonstick cooking spray.

  3. Cover bottom of casserole with half of the crushed Doritos, about 2 cups.
  4. Cover bottom of casserole with crushed Doritos
  5. In a large bowl combine the diced chicken, sour cream, condensed soup, onion, chili powder, salt, pepper, and garlic powder.
  6. Combine ingredients
  7. Pour the chicken mixture on top of the crushed Doritos in the casserole.
  8. Pour chicken mixture over crushed Doritios
  9. Sprinkle the remaining crushed Doritos over the chicken mixture and then top with the shredded mozzarella and cheddar cheeses.
  10. Top casserole with remaining crushed Doritos and cheese
  11. Bake the casserole in the preheated oven for 30 to 40 minutes, or until the topping is melted and lightly browned.
  12. Bake casserole until cheese is melted
  13. Serve and enjoy!
